Mom's Apple Cake
| oil | 1/2 cup | ||

| vanilla | 1 teaspoon | ||
| flour | 2 cups | ||
| baking soda | 1/2 teaspoon | ||
| baking powder | 1 teaspoon | ||
| lemon juice | 1/8 cup (1/2 lemon) | ||
| orange juice | 1/4 cup (1 orange) | ||
| sugar | 1/3 cup | ||
| cinnamon | 1 teaspoon | ||
| apples | 3 or 4. I use Paula Red apples | an orangeparade recipe |
| Beat together oil, sugar, eggs,
and vanilla. Mix together flour, baking powder, and baking soda. Add flour
mixture alternately with juices (1/3 flour, 1/2 juice, 1/3 flour, 1/2
juice, 1/3 flour). Grease 9 x 13 pan and pour in half the batter. Combine
the sugar and the cinnamon. Peel, core, and slice the apples over the
batter. Top the apples with half of the cinnamon-sugar mixture.
Cover with the rest of the batter and sprinkle the rest of the cinnamon-sugar
over the top. Bake at 350F for 45-60 minutes. (I've found that it takes much closer to 45 than 60). |
