Mom's Apple Cake

  oil 1/2 cup  
  sugar 1 1/3 cup  
  eggs 3

 

  vanilla 1 teaspoon  
  flour 2 cups  
  baking soda 1/2 teaspoon  
  baking powder 1 teaspoon  
  lemon juice 1/8 cup (1/2 lemon)  
  orange juice 1/4 cup (1 orange)  
  sugar 1/3 cup  
  cinnamon 1 teaspoon  
  apples 3 or 4. I use Paula Red apples

Beat together oil, sugar, eggs, and vanilla. Mix together flour, baking powder, and baking soda. Add flour mixture alternately with juices (1/3 flour, 1/2 juice, 1/3 flour, 1/2 juice, 1/3 flour). Grease 9 x 13 pan and pour in half the batter. Combine the sugar and the cinnamon. Peel, core, and slice the apples over the batter. Top the apples with half of the cinnamon-sugar mixture.  Cover with the rest of the batter and sprinkle the rest of the cinnamon-sugar over the top.
Bake at 350F for 45-60 minutes.
(I've found that it takes much closer to 45 than 60).
